Vegetable curry

Ingredients

  • 1 tbsp corn oil
  • 1 aubergine diced
  • 1 onion chopped
  • 2 cloves of garlic
  • 1.5 potatoes diced
  • 1 chili pepper sliced
  • 1 tin tomatoes
  • some mushrooms chopped
  • 1 romano pepper chopped
  • 1 tsp cumin ground
  • 1 tsp coriander ground
  • 1 tsp chili powder

Method

Fry the onion and garlic. Add the potato and aubergine. Add the chilli pepper and mushrooms. Add the romano and tomatoes. Add the ground spices. Cook.
